Baked Cheese Sticks & Quick Marinara Sauce

I came across a recipe for Baked Mozzarella sticks. After thinking about it and researching other recipes for the same thing, I combined a few recipes and made them last week as an appetizer for dinner one night. I then decided I needed some marinara sauce for dipping. After searching online, I found a few recipes that looked good and, once again, I took a little from a few different recipes and made my own.

Baked Cheese Sticks
4 cups Cornflakes
1/2 tsp dried oregano
1 tsp garlic salt
1/4 cup Parmesan cheese (optional)
1/4 cup flour
2 eggs
2 tablespoons water
1 (8 ounce) package mozzarella cheese

Preheat oven to 400 degrees. Line baking sheet with foil and spray with cooking spray.

In a large shallow bowl/plate, crush the cornflakes to approximately 1 cup. Mix together the cornflakes, oregano, garlic salt & Parmesan cheese.

Place flour in another small bowl/plate. Beat eggs with water in another small bowl/plate.

Cut the mozzarella cheese into 12 sticks. Dip the cheese sticks in the flour, then the egg mixture, then the cereal mixture. Dip the cheese in the egg and then the cereal mixture again to get a good coating then place on the baking sheet. Put the cheese sticks in the fridge for at least 30 minutes.

Bake in a preheated 400 degree oven for about 8 minutes or until cheese is soft and the cornflakes are lightly browned.

Marinara Sauce
1 Tbs olive oil
2-3 garlic cloves, minced
1/4 cup chopped onion
14 oz can crushed tomatoes
14 oz can tomato sauce
1 1/2 tsp dried oregano
1 1/2 tsp dried parsley
1/2 tsp onion powder
1 tsp sugar
1 tsp salt
1/2 cup Parmesan cheese

Heat oil in medium saucepan over medium heat. Add garlic and onion and cook for 2-4 minutes, stirring frequently.

Add remaining ingredients then bring to a boil. Reduce heat to low and simmer for 15-20 minutes, stirring often.
