3 cups (1 large can) sweet potatoes, drained and mashed
1/3 cup butter
3/4 cup sugar
2 eggs, beaten
Preheat oven to 350. Spray pan.
Place all ingredients in bowl, mix well with hand mixer to desired consistency.
Place in dish (I use a pie dish for a single batch, or use a 8x8 pan).
Topping:
3/4 cup brown sugar
1/2 cup softened butter
1/2 cup flour
3/4 teas. cinnamon
Mix until combined. Crumble over top of potatoes, covering entire surface (sometimes I double the topping...because I love it!).
Place in oven.
Bake 30-40 minutes until topping is light golden brown and bubbling.
