Baked Teriyaki Chicken

I love this "budget meal". If you watch sales you can get bone-in chicken for as little as 45 cents a pound.

1 1/2 Tlbs cornstarch
1 1/2 Tlbs cold water
3/4 cup sugar
3/4 cup soy sauce
1/3 cup cider vinegar
2 cloves garlic
3/4 tsp ginger
1/2 tsp pepper
12 bone-in chicken pieces skinned, breast, leg or thigh
In a saucepan over low heat, combine ingredients except chicken. Let simmer, stirring frequently until it thickens and boils.
Place chicken in a greased, foil-lined 9x13 baking dish. Pour sauce over chicken. Bake at 400 degrees for 20 minutes covered then 40 minutes uncovered turning chicken halfway through.
Serve with rice
