Mexican Rice Dish

This is kind of similar to taco salad. This is a great recipe that you can easily increase the amount you make to feed more people. If I am making it for the three of us and we want leftovers for lunch the next day, I will use 1 1/2 cups of water & the same amount of instant rice.

1 lb hamburger
1 packet taco seasoning
1 small can diced green chilies
1 small can tomato sauce
chicken broth (I usually just use water)
instant rice (the same amount of water that you use)
Fritos corn chips
lettuce
cheese
tomatos
olives
sour cream
salsa
guacamole

Brown hamburger. Drain. Add taco seasoning, green chilies and tomato sauce. Mix together. Add chicken broth (or water). Bring to a boil. Add instant Rice (same amount of rice as the liquid you used). Mix together and cover. Remove from heat and let stand until rice is tender, approximately 5 - 10 minutes. I usually just put the rest of the ingredients out and everyone can make their own to their specific taste. But if you wanted to, you could crush Fritos into the bottom of a bowl, add the lettuce around the outside of the bowl, add the meat mixutre and then top with cheese and other taco garnishings.
