Here is another recipe that we have tried lately and really enjoyed.
1/2 cup orange juice
1/3 cup soy sauce
1 tsp ground ginger
1/2 tsp onion powder
1 tsp orange zest
3 pounds boneless skinless chicken breasts
3 tablespoons vegetable oil
In a zipper style bag combine all ingredients except chicken and mix well. Add the chicken and let marinade in the fridge overnight or for at least 8 hours.
Preheat oven to 350 degrees. Remove chicken from the marinade. Put chicken in a baking dish. Pour remaining marinade over chicken. Cover and bake in the oven for 30 minutes. Remove cover and bake 15 more minutes.
After the chicken is done, you could use the juices to make a gravy. We usually serve this with rice and last time, we cooked the rice with a little orange juice.

Ah, this sounds very good. I might be inclined to add a chili pepper of some sort, too, but as is, I think it sounds easy and very good.
