Chicken Florentine


I got this recipe off the Kraft Foods website. Marie & Joe and I made this while they were visiting us last week. A nice thing about this recipe is that it is super easy and quick to make, but it can look kind of fancy.

3 Tbsp Italian Dressing, divided
4 cups spinach leaves
4 boneless, skinless chicken breast halfs (1 lb)
8 slices ham
sliced cheese (recipe calles for swiss, but I used mozarella)

Heat 1 Tbsp of dressing in skillet on medium heat. Add spinach; cook and stir 1 minute or until spinach is just wilted. Remove from skillet and cover to keep warm.

Add remaining 2 Tbsp dressing and the chicken to skillet; turn chicken over to evenly coat both sides with dressing. Cook 5 - 6 minutes on each side or until chicken is cooked through.

When chicken is done, top with ham and cheese. Cover. Reduce heat to low and cook a couple of minutes until cheese is melted. You could also place it under a broiler to brown if you wanted.

If you want it to look fancier, you could put some spinach on a plate and then put a piece of chicken on top.

Notes: When Andrew and I made it the first time, we used asparagas and cooked the asparagus in the dressing.
