Black Bean Salad or Salsa


I have combined three recipes and experimented with four batches of this to make it how I really like it. Joe uses chips to dip like salsa and I use it as a side salad (or lunch!).
As always, you can add, remove or alter amounts depending on your own tastes.

1 (15 oz)can black beans, rinsed and drained
1 (15 oz)can black eyed peas (or another black beans, white, etc.)
1 can corn, drained
1/2 cup chopped onion
1 chopped green pepper
1 jalapeno pepper, chopped
1 (14.5 oz) can diced tomatoes, drained or one or two tomatoes
1 cup Italian-style salad dressing
1 clove garlic, chopped
1 cup jicama, peeled and diced
cilantro to taste
Combine all ingredients and mix well. Let stand a few hours to let flavors blend.
