I found this recipe while recipe searching for another cookie that I am trying to experiment with (it will be posted later on today). It is a nice simple recipe for a chocolate cookie.
1 1/4 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup light brown sugar
2 large eggs
1/4 cup powdered sugar
Heat oven to 350 degrees. In a medium bowl, whisk together flour, cocoa powder, baking powder and salt.
With an electric mixer, beat the butter and brown sugar on medium-high speed until light and fluffy, about 2-3 minutes. Beat in the eggs. Reduce speed to low and gradually add the flour mixture, mixing just until incorporated.
Form the dough into balls, roll into powdered sugar and place on baking sheet. Bake for 13-15 minutes or until cookies are firm and the tops crack.
