Homemade Ice Cream & Drumsticks

Since July is National Ice Cream month and with summer in full swing, I have rediscovered the joy of making ice cream. A few weeks ago I made some Vanilla Ice Cream and today I experimented and made Coconut Almond Ice Cream. Afterwards, I made some Drumsticks. We really liked how it all turned out.

Vanilla Ice Cream
4 cups Half-and-half, light cream or milk
1 1/2 cups sugar
1 tablespoon vanilla
2 cups whipping cream

In a large bowl combine half-and-half, sugar and vanilla. Stir until sugar dissolves. Stir in whipping cream. Place in ice cream freezer and freeze according to freezer directions.

Coconut Almond Ice Cream
1 can (14-15 ounce) Coconut Milk
2 cups milk
1 1/2 cups sugar
1 tablespoon Almond Extract
2 cups whipping cream
Shredded coconut
Almonds, roughly chopped

In a large bowl combine milks, sugar & vanilla. Stir until sugar dissolves. Stir in whipping cream. Place in ice cream freezer and freeze according to freezer directions. Stir in the the chopped almonds and coconut when the ice cream is almost frozen.

Drumsticks
Ice Cream of choice (I used the Coconut Almond Ice cream today)
6 Sugar Cones
1 1/2 cups chocolate chips
18-20 chocolate chips
Nuts, if desired (I used chopped almonds today)

Melt 1 1/2 cups chocolate chips (I like to melt mine in a glass bowl in the microwave stirring every 20 seconds or so until melted).

Put three chocolate chips in the bottom of the sugar cone, spoon and stir a little melted chocolate on the inside of the sugar cone. Fill with ice cream, then add a scoop on top. Spoon more chocolate on top and then chopped nuts, if using.

Place in freezer to harden, then enjoy!

P.S. The picture of just the Drumstick was too blurry, so you get a picture of my oldest boy enjoying one.
