Oatmeal Cake

1 cup quick oatmeal
1 cup sugar
1/2 cup shortening
1 cup brown sugar
2 eggs
1 1/2 cup flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1 tsp vanilla

Boil 1 1/2 cups water, add oatmeal and set aside. Cream the sugar, shortening, brown sugar and eggs. Add the hot oatmeal and stir.
In another bowl, mix the flour, soda, salt, and spices. Add to the oatmeal mixture, adding the 1 tsp vanilla.
Bake at 350 degrees in a 9x13" pan for 30 minutes or until toothpick inserted in center tests done.

Icing
1 cup sugar
1 cup evaporated milk
1/2 cup butter
1/2 tsp vanilla

Place all ingredients except vanilla in pan. Bring to a boil and continue boiling on medium heat until mixture is as thick as you want it. (It won't get very thick, so I usually let it sit in the pan for up to 30 minutes until it sets up a little bit.) Add vanilla and stir well. Pour over warm cake.
