Ritz Cracker Pie

While in Arizona, Lori gave me this recipe. It really does taste like apple pie. Don't ask me how, I just know it does!!!

1 1/2 cups sugar
2 tsp. Cream of Tartar
2 cups water

Bring the above ingredients to a boil.
Add: 2 tsp. Lemon Juice & 20 Ritz Crackers

Boil for 2 minutes. DO NOT STIR. Remove from heat. Pour into unbaked pie crust that is sprinkled with a little butter and cinnamon. You may also sprinkle a little cinnamon on top. Add top crust. (Don't forget to make your pretty design on the top crust!).
Bake at 375 degrees until crust is lightly browned.
Let stand and cool completely before serving. (You can always reheat just before you served it.)
